When I was younger, after leaving home, I started spending a lot of time in the kitchen. Playing with spices, concocting dishes from all over the world, trying out… let’s say colourful creations. As they say, you learn by doing, don’t you? As with cooking, I’ve learnt that the world of wine and food pairing is something you discover by experimenting, by daring and with experience.
Once my sea bream ceviche was cooked to perfection, I was ready to find its ideal companion, because every great dish deserves a great wine.
That’s how I discovered wine and its incredible ability to tell stories, a bit like the dishes I was preparing. Take Chasselas, for example, my favourite grape variety. It’s not just about pressed grapes. No, it’s a real story in a bottle from our Swiss terroirs. Chasselas, with its delicate balance of fruity notes and minerality, has the gift of expressing the soil it comes from with sincerity and finesse. Whether it’s limestone, granite or clay, every glass of Chasselas is an invitation to discover the diversity and richness of Switzerland. It’s this chasselas that I love to enjoy with my ceviche, for example.
I love travelling around our beautiful country by train, taking in the breathtaking panoramas and getting to know the unique winegrowers. Women and men who respect the land and are dedicated to making wine that really speaks to us about where it comes from. In particular, I’m fascinated by the work of young people and women in the wine industry, who are often under-represented in the wine media landscape. They bring a much-needed breath of fresh air to the Swiss wine industry, with a real commitment to environmentally-friendly production.
It’s this Switzerland that I’m trying to help you discover on Swiss-Cork. My aim is simple: to promote Swiss wine, an often overlooked gem, and to highlight the hidden talents of our terroir.
